After capturing fans with beachfront hotspot The Shorehouse in Swanbourne, the Kailis Hospitality Group is set to dominate Cottesloe in 2024 with a wellness dining space, Magic Apple Wholefoods, and fine-dining brasserie and grill, Gibney, to open on Marine Parade.
“We’re all about different concepts that excite people,” says George Kailis, whose portfolio includes Island Market Trigg, The Shorehouse and Kailis Fish Market Cafe in Fremantle. “We identify gaps, look at growing food trends and the beverage scene in Perth.”
With an emphasis on nutrition and sustainable eating, Magic Apple is a long-shuttered wholefoods brand which started as a juice bar at the Fremantle Market in the 1970s and expanded into multiple health stores throughout Perth in the 1980s.
Kailis has childhood memories of visiting the store for wholesome treats. The restaurant will feature a vegetarian and vegan offering with fresh salads, vegetables, and tofu options, plus locally-sourced proteins for dine-in or takeaway. The drinks menu will spotlight non-alcoholic options, house-brewed tonics, and, of course, coffee.
“We’ve been waiting four years for a site, so when the old Barchetta site (in North Cottesloe) went up for tender we started the process, which took two years,” explains Kailis. “Cottesloe is screaming for something down this path, and I think the street presence is perfect.”
Situated further south on Marine Parade, fine-dining restaurant Gibney will occupy a 600-square-metre space with oceanfront views stretching from South Cottesloe to Rottnest. The menu will take inspiration from international steakhouses and brasseries with elegant snacks, steaks, pastas and a Mediterranean seafood grill. Expect waistcoated staff, caviar, a dessert trolley, and old-school salads, including the Gibney Caesar, made at the table.
According to Kailis, there haven’t been many options in South Cottesloe since a tearoom in the 1940s. “The location is premium; the service will be premium and there will be an alfresco space that blurs the lines between indoor and outdoor dining.”
The two venues are set to open in 2024, with Kailis promising there’s more to come. “I’m keen to get into a hotel space and transition into the hotel market,” he says.
