A lavish, Parisian-inspired brasserie is coming to Crown Street in April. Set within the former Toko site, Armorica Grande Brasserie is the soon-to-open third venue from restaurateur Andrew Becher, who’s also behind opulent Potts Point venues Parlar and Franca.
Named after the ancient Celtic region that once comprised much of modern-day Brittany and Paris, Armorica is Sydney’s latest love letter to the French capital. The 150-seat restaurant draws on classic Parisian brasserie style through a contemporary lens, to recreate its “fun, energy and excitement” and the “timeless charm of classic French dining”, Becher says in a statement.
Woodfired cooking and traditional French techniques will be central to the menu by executive chef Jose Saulog, which showcases market-best Australian meat and seafood. A custom-built Josper grill will be central to the open kitchen, creating dishes in smoke and flame that nod to the cooking heritage of Paris and Brittany.
The menu comprises small plates of a coral trout crudo with finger lime; foie gras “torchon” (which translates to “dish towel”, a reference to the method in which the liver is cooked and moulded); and a lush seafood tower of oysters, prawns, octopus roulade and rock lobster. A large section of the menu is dedicated to oh-so-Parisian steak frites, including Australian beef and a richly marbled Gundagai Lamb Barnsley chop.
Diners can also expect an impressive wine list spanning more than 400 bottles from classic growing regions around the world, as well as an extensive cocktail menu inspired by modern Parisian culture.
Designed in collaboration by Becher, design studio Steel and Stitch (the Lobo) and custom joinery company Contempo and Co, the space features timber-detail ceilings, hand-crafted European oak joinery, solid brass gantries, and deep-red leather banquettes.
