Carlton Hotel’s all-day dining restaurant, Cafe Mosaic, reopens with a brand new “Truly Singapore Flavours” seafood buffet.
Seafood lovers get to feast on a gastronomic journey of the freshest seafood at the all-you-can-eat seafood buffet, available every Friday to Sunday. Helmed by Executive Chef Lee Hwee Yaw, the refreshed buffet experience features Singapore’s most loved local dishes, seafood on ice, sashimi platters, international fare, interactive live stations, and a visual spectacle of desserts.
Start the buffet with an appetizing seafood platter that tempts with freshly-shucked oysters, king crab legs, black mussels and poached prawns at the start of the buffet. We love fresh and plump oysters. I slurped it up and was greeted by a burst of sweetness and a distinct taste of the sea. I’m not going to tell you how many oysters I had. Too many, just too many.
Other appetizers include Assorted California Maki, Melon & Prawn Salad with Goma Dressing, Spicy Seafood Salad with Glass Noodles and Spicy Jelly Strips Fish Salad.
Indulge in a seafood extravaganza for dinner with an extensive variety of fresh seafood prepared in a variety of cooking methods to highlight the versatility and natural flavours of these ocean gems. You can look forward to unlimited servings of tantalising mains with local flavours. Highlights include Fried Fish with Mala Sauce, Wok-fried Prawns with Capsicum & Leek, Scallop with Soya & Garlic Flakes, Oatmeal Cereal Fried Fish.
A family favourite, the Salted Egg Crayfish is primed to be one of the most popular dishes. If you’re craving for fresh crayfish in a creamy sauce, this is made for you! We love that they are quite generous with the bright yellow, gooey salted egg sauce. The team has also peppered the crayfish with curry leaves for that extra burst of flavour. If you prefer something classic, the Singapore Chili Crayfish here are not to be missed.
There is more than just seafood! You get to enjoy a range of meat dishes at the buffet as well. Some must-try includes Herbal Chicken, Marmite Pork Ribs, Grilled Pork Skewers, Wok-fried Teriyaki Pork Belly and more. The carving station features fork tender Slow-roasted Pepper Crusted OP Beef and flavourful Oven-roasted Herbs Leg of Lamb. Diners can also look forward to local favourites such as Singapore Rojak, Gado Gado and Mee Siam.
Noodle fans will be pleased to know that Cafe Mosaic’s renowned Live Noodle Bar has made a comeback as well. Expect bowls of slurp-a-licious Asian favourites such as the Singapore Laksa! The laksa gravy rocked a nice vibrant orange. Imagine the noodles and taupok that have sufficiently absorbed the thick and mildly spicy gravy which carries a strong dried shrimp flavour. So good!
End the meal on a high note with sweet treats freshly baked from the in-house pastry kitchen. Sink your teeth on the Red Velvet Cake, Chocolate Ganache, Cheese Cake, Swiss Roll, Banana Pound Cake and more!
Truly Singapore Flavours Seafood Buffet is available from 6 May 2022, for dinner on Fridays and Saturdays, and lunch on Sundays, priced at S$118++ per adult and S$38++ per child (6 to 12 years old).
