One of the easiest and lip-smacking South Indian egg recipes is Muttai Thokku. Muttai is a combination of eggs with thick onion and tomato masala.
To make this recipe, add onion, salt and bay leaves to a heated wok already containing oil, mustard seeds, fennel seeds, curry leaves, kalpasi and cinnamon. After the onions are cooked, add a paste of tomatoes, ginger and garlic. Add all the primary spices like garam masala, red chilli powder, black pepper, turmeric and green chillies. Saute for eight to 10 minutes. Add boiled eggs with slits to the mixture and let it simmer for a few minutes.
Muttai Thokku pairs well with rice or appam.

Egg keema is an unmissable Indian egg dish that is relished by foodies everywhere.
The simple dish is prepared by adding chopped onions and ginger-garlic paste in a wok containing whole spices like cardamom, cloves, cinnamon, bay leaves and cumin. Add chopped tomatoes after cooking the onion mixture for a while. Wait for tomatoes to become mushy and add spices like turmeric, chilly powder and garam masala. Cut boiled eggs into cubes, add it to the mixture and stir gently.
Garnish with mint or coriander and serve hot with naan or paratha.

Tomato egg curry is one of the best comfort foods to uplift any kind of mood. Pairing with Indian breads like roti or paratha or even rice, tomato egg curry is easy to make.
Add onions and chillies to a wok containing oil, chopped garlic, curry leaves and saute the mixture until the onions are partially cooked. Add chopped tomatoes, salt and turmeric and cook for a few minutes. Add eggs, red chilli powder and garam masala in the end. Cook until the tomatoes turn mushy and add some water. Finish off by adding some coconut milk and serve hot.

The desi dish is prepared by cooking onions, tomatoes, ginger, garlic, green chillies and spices together. Add kaleji to the mixture and let it cook for at least 25 minutes. Add raw eggs to the pot and stir well until it’s done. Garnish with coriander leaves and serve hot with sulemani paratha or khameeri naan.
