Swissôtel Clark’s Ristorante di Verona has launched the Verona Brunch Club (VBC), the first authentic Italian restaurant in Clark. It offers guests an upscale brunch dining experience al fresco overlooking the mountainous and natural view of the Zambales Mountain Ranges.
Located on the fifth floor of Swissôtel Clark, the new dining concept has a spacious but well-appointed outdoor space that can accommodate about 100 guests and customers and gives an exclusive vibe for diners.
The vibrant outdoor setup is complimented by a live DJ performance on deck to liven up guests’ brunch experience.
Guests are lifted by the upbeat music while enjoying a number of table games with friends.
There is a designated game master to lighten guests’ experience or they can play amongst their friends for a fun and interactive morning.
The timeless and contemporary place of Verona, Italy affords guests to enjoy an authentic, flavorsome Italian brunch.
VBC has an oyster bar, with three ways La Boudeuse oyster (fresh, Rockefeller, and baked cheese), served with mignonette, lemon wedge, caper flower, cocktail onion, and cocktail sauce.
As for the appetizer, the restaurant dishes out bruschetta with bottarga, and beef carpaccio crepe with crispy parmesan cheese, arugula, pine nuts, cocktail sauce and balsamic lemon reduction.
Seafood salad, mushroom soup, and seafood green pea soup are also ordered. The restaurant prepares an array of pasta dishes: spaghetti carbonara, gnocchi tartufo, beef lasagna, and tortellini al brodo.
Risotto is a must-try with risotto ai funghi and risotto ai frutti di mare variants. The restaurant’s mini pizza has four-formaggi, mare e monti, and spicy salami flavors.
Among the main dishes that guests can take delight on are porchetta served with marble potato, carrots and green peas cream; wagyu double beef burger served with truffle fries; beef tenderloin served with Hasselback truffle potato, carrot, asparagus and red wine reduction sauce; and pan-seared salmon fillet, star anise beurre blanc sauce.
Brunch Classics include waffles with summer fruits drizzled with strawberry compote and chocolate ganache; butter waffle with double-dipped chicken, spinach, carrots, and chili honey; fluffy pancake stack, caramelized banana, mascarpone cheese drizzled with maple syrup.
Guests can also try the Cheese Board, from grana Padano and pecorino sardo, to sweet gorgonzola and taleggio. Its charcuterie board, on the other hand, has prosciutto cotto, cacciatorino, nduja, and spicy salame.
To complete the satisfying brunch, guests can treat themselves to mascarpone cheese cake, candied banana mille feuille, fruit tarts, and Swiss chocolate.
The restaurant houses a 25-year old Balsamic Vinegar of Modena, which is used mainly as an ingredient for reductions, following all the rules of a century old tradition.
Ristorante di Verona also offers free-flowing drink selections to get the full dining experience. Guests and customers alike can have a sip of their favorite champagne or mimosa, or choose from the specially concocted wines or cocktails to suit your palate.
Ristorante di Verona is home to more than 300 wine selections, and is the latest addition to Swissôtel Clark’s 10 dining outlets.
