The Place Located in Serangoon, Gusta Sourdough Pizza Co. is an intimate little pizzeria in Serangoon located a stone’s throw away from the NEX mall. It is located in the space of what used to be Cottontail Creamery. The space of Gusta Sourdough Pizza is small and quite cosy, where there are not many concepts in Singapore which specialises in Neo-Neapolitan sourdough pizza specifically.
The concept is by self-taught chef-owner Sean Lai, whom is also behind Cottontail Creamery where the café served as a testbed and R&D HQ for his pizza project.
The Food There are more than ten pizza flavours where each pizza is made using traditional Italian methods and slow-fermented for 48 hours. There are classic flavours such as Magherita and Hawaiian, and also specials such as Mala Chicken and Singapore Chili Crab.
I started with some starter dishes like the Stracciatella & Vine Tomatoes (S$18.50) where the juicy vine tomatoes are garnished with sea salt, basil, and a drizzle of house-made basil oil.
Another starter I had was the sous-vide Australian wagyu Roast Beef (S$16.50) which is paired with chimichurri sauce and horseradish mayo. Not a big fan of this starter as the beef flavour is quite singular for me, can skip.
On to the sourdough pizza which is the highlight here at Gusta, I had the Mushroom & Truffle Oil (S$27.50) which is layered with a homemade porcini salsa, white Swiss button mushrooms, kale, and truffle oil. This is quite a safe option and a crowd’s favourite where you get a good balance of the truffle and mushroom taste.
I next had the Calabrese Salami (S$22.50) pizza, which turned out to be one of my favourite pizza flavours here. I love that smoky Calabrese salami flavour with a touch of some homemade chilli oil for that added spice. You can also opt to add on garlic maple syrup sauce available on each table, which complements the salami well.
A surprise win for me is the Mala Chicken (S$24.50), which sounds unconventional for pizza. That said, I like the tangy aroma and taste of the mala element where it is not too spicy as well. The base of the pizza is a mala cream sauce topped with chicken mince and mozzarella.
Chef-owner Sean is Swiss, and hence there is a particularly familiar Swiss-inspired pizza on the menu – Raclette Cheese & Potato (S$26.50). This is quite a controversial flavour on my dining table as it drew mixed reactions from both ends. You get thinly sliced potato along with generous raclette cheese, which I find quite interesting and unique for a pizza. Is this my favourite flavour here? Nope, and if I were to choose again, I would have the Calabrese Salami or Mala Chicken over this flavour.
Rants Not a huge space where the dining table could get cramped up with the pizzas and dining plates.
Will I Return Again? A cosy new dining addition to Serangoon which offers artisanal pizza option is a welcoming idea for me. Gusta Sourdough Pizza is a casual dining concept which is ideal for family meals or small group gatherings where you can try out more pizza flavours for a better dining experience.
