The Place One of the exciting new openings in Singapore this year is Osteria Mozza, which opened at Hilton Singapore Orchard, sharing the same main entrance as Estate. The brand Osteria Mozza should be a familiar one, as it used to be at Marina Bay Sands before it closed, and thankfully, reopened again in Hilton Orchard Singapore as I swear by their pizzas in the past.
Osteria Mozza is one of the very few Italian restaurants in Southern California with a Michelin Star, by Chef owner Nancy Silverton. It is a 120-seater restaurant, with a chic contemporary interior. I like that there are different pockets of dining space which adds to the cosiness of the ambience.
Otherwise, the best view is the high counter table near the entrance where you get a good glimpse of the action in the open kitchen.
The Food Cal-Italian cuisine; the Singapore menu features classics from the original one-Michelin-starred restaurant in Los Angeles, as well as a number of new dishes the majority of which are completely new to Singapore. Expect the likes of Silverton’s signature handmade pastas to wood-fired dishes and antipasti from the Mozzarella Bar. There are two wood-burning ovens for Silverton’s show-stopping pizzas, meats, fish and fresh vegetables. From what I gathered from the staff, the pizzas will only be available from 1 September onwards, for lunch service only.
I started with the Burrata di Puglia (S$68) with Cruschi Peppers & Fettunta. I love that Fettunta, sourdough bread drenched in Sicily extra virgin olive oil along with some sea salt. It is so delicious, and even better when I had it with the fresh burrata.
You know a dish is a signature when the chef’s name is stamped on it. The Nancy’s Caesar Salad (S$23) with egg, leeks & anchovy crostini is anything but simple. Hearty flavours where I was recommend by the staff to sliced the crostini and have it along with the Romaine lettuce, so good, which I rarely say of salad.
The Grilled Calamari (S$22) with spicy romesco is another great starter to share. You get beautifully sliced squid which spots a very tender texture, and it goes well with the moreish romesco sauce which is not spicy at all.
Moving on to pastas, the Fonduta Ravioli (S$38) looks plain and simple but it burst with flavours as it is topped with melted butter. The flavour is very cheesy and rich and it does get a little cloying after a few mouthfuls. My recommendation is to share this dish. The 25yrs acèto balsamico tradizionale di Modena is also added to the pasta, which is balsamic vinegar, as it helps to cut through the richness of the cheese.
The other pasta I had was the Orecchiette (S$32), with sausage & Swiss chard. You get an al dente texture for the orecchiette, which is more savoury than the Fonduta Ravioli in my opinion.
For mains, I had the Branzino alla Piastra (S$65), a lovely sea bass with herb salad along with charred lemon to squeeze over the fish. Slightly buttery flavour from the fish skin and meat, mostly deboned, and is a relatively light mains to have after the heavy pastas earlier.
I had the sea bass along with a side dish – Grilled Broccolini (S$18) with garlic-lemon vinaigrette.
Desserts are heavyweight as well, with a gelato-centric dessert menu. The Banana Gelato Pie (S$20) is every banana lover’s dream – rich gelato texture and taste, with a delicious crust at the bottom. It goes really well with the hot fudge sauce & candied hazelnuts.
Feeling adventurous? There is the Rosemary Olive Oil Cakes (S$20) with olive oil gelato & fried rosemary. This is way too savoury for me, and I cannot really appreciate olive oil gelato which tastes oily? I am sticking to the Banana Gelato Pie.
Rants It does get noisy with the full-on crowd. That is part of the dining ambience, I guess?
Will I Return Again? Overall, the dishes I had Osteria Mozza are well-executed, and I do like the lively dining ambience. It is not fine-dining, so let your hair down and enjoy a meal here at ease. Can’t wait to be back for their pizzas!
