In 2021, brothers Trevor and Steve Simmons took Industry Beans beyond the inner city by opening a flagship cafe, restaurant, roastery and retail space at Chadstone Shopping Centre.
A shopping centre might be a far cry from the brand’s humble, industrial beginnings in Fitzroy in 2013. But for Trevor and Steve – who realised they could put a roastery in and design the space how they wanted – Chadstone felt just right.
The duo engaged acclaimed Melbourne architecture practice March Studio (Jackalope Pavilion) to design the space – in line with the sleek, minimalist aesthetic of their other locations across Melbourne, Sydney and Brisbane. The white-walled spot is flooded with natural light and there’s greenery inside and out, making you feel like you’re sitting in a greenhouse.
It’s also Industry Beans’ first foray into all-day dining, so you can have breakfast for dinner – or dinner for breakfast. Or just stick to the status quo. In the “brunch” section of the menu, you might go for the potato nest with a porcini-dusted egg, wild-mushroom duxelles and truffle oil; or the pandan bubble waffle with blueberry gelato and coconut gel. More afternoon-appropriate might be the jalapeno-mayo-slathered milk buns stuffed with prawn, barramundi, Yarra Valley roe, and the Manchego croquettes with black garlic.
As with their other cafes, some dishes incorporate coffee. There might a coffee-rubbed-Wagyu burger and spicy barramundi folded eggs with coffee-mango togarashi.
While most of the core blends are roasted in Fitzroy, each month the Chadstone team roasts one unique single origin for espresso and two specifically for batch brews. You can buy the beans to go, as well as merch and Aeropress and Moccamaster products.
There’s booze, too. Almost everything on the wine list is Australian, and all the beers are from Victorian brewers such as Moon Dog and Doss Blockos. But the best way to drink here is by going for one of the signature caffeinated cocktails, which might include a cold-brew Negroni and an Espresso Martini made with the Fitzroy Street blend and a hint of wattleseed. There’s also a riff on bubble tea with cold brew, coffee-soaked tapioca pearls and soy milk.
