Authorities allege a 41-year-old man hit his head on the ground during a fight with two men in their 20s.
“He sustained serious head injuries and was conveyed to Royal Perth Hospital for treatment,” WA Police said.
He has undergone surgery to relieve swelling in his head and remains in a critical but stable condition.
Much of the restaurant remained a crime scene throughout the morning as detectives collected CCTV and spoke with witnesses.
A 22-year-old man will appear in Perth Magistrates Court on Wednesday charged with one count of grievous bodily harm.
A second man, also aged 22, has been charged with assault causing bodily harm and will appear in court at a later date.
