Sina Klug is behind Nutie Donuts, a gluten-free bakery in Balmain, and Miss Sina, a vegan cafe and bakery that opened in Marrickville in 2022. Now Klug has opened a second Miss Sina in Surry Hills, in what was once a second Nutie outlet.
The vegan menu is seasonal and changes every day. Call in for pastries, cinnamon rolls, lunch packs, and fresh sandwiches and bagels. Everything is baked daily in Marrickville, and everything – including the chutneys, the breads and the pickles – is made from scratch.
While Klug embraces her German roots and uses generations-old family recipes for making pretzels and breads the traditional way, she’s also focused on innovation.
“We’ve got such an open and creative space,” says Klug. “We have set experiment days every week where everyone gets to bring their ideas and try them during work hours.”
For example, the Vada Pav Bagel. It’s a bagel with an Indian-style vada pav fried potato ball, coriander chutney, dry coconut masala, lime-cucumber raita and green chilli sauce. The special was so popular it will be on the menu permanently.
Miss Sina also uses bruised or overripe fruit and veg from its supplier that would otherwise be bound for landfill. There is a retail range of chutneys and pickles, which is also used on the menu, made from excess produce.
To further minimise waste, the Miss Sina team uses veggie scraps to make cauliflower leaf pate, and cabbage stems for homemade kimchi. The staff’s latest experiment was using ginger peel to make ginger bug (a starter culture, thanks to its high yeast content) for the in-house ginger beer.
“Today our fruit and veg supplier dropped us 30 kilos of mushy nectarines that no one wanted,” says Klug. Her team made nectarine, Earl Grey and cardamon compote filled doughnuts.
Locals have been known to bring in citrus fruits, passionfruit, rhubarb and rosemary in exchange for coffee or a snack.
There’s a new office catering menu and a birthday cake menu to cater to Surry Hills’ growing population of office workers, fuelled – as usual – by Klug’s mission to cater to people with special dietary needs and preferences.
And those looking for gluten-free are still looked after: Miss Sina has a specific fridge stocked with treats from the all-gluten-free kitchen at Nutie headquarters in Balmain.
“We have a lot of Nutie things in-store still, which are stored separately,” says Klug.
Next up for the bakery is a custom-built chocolate room in Marrickville, with high-end equipment from Europe, due by Easter.
“We can’t wait to branch out into making our own chocolate products”, says Klug.
