Ravinder Bhogal’s buddha bowl featuring pickled beets, giant couscous and tuna, cauli and jammy eggs is a delicious and healthy meal.
To make this dish, you will need:
* 1 cup cooked giant couscous
* 1/2 cup pickled beets, sliced
* 1/4 cup tuna, flaked
* 1/2 cup roasted or steamed cauliflower florets
* 2 jammy eggs
* 1 tablespoon tahini
* 1 tablespoon olive oil
* 1/2 teaspoon cumin powder
* 1/4 teaspoon coriander powder
* Salt and freshly ground black pepper to taste
* A handful of fresh herbs, such as cilantro or parsley, for garnish
Instructions:
* Heat the olive oil in a large skillet over medium heat. Add the cumin and coriander powder and cook for 1 minute, or until fragrant.
* Add the cauliflower florets and cook for 5 minutes, or until lightly browned and tender.
* Add the giant couscous and tuna and cook for another 2 minutes, or until heated through.
* In a small bowl, whisk together the tahini, jammy eggs, and salt and pepper.
* Drizzle the tahini mixture over the couscous and tuna mixture.
* Top with the pickled beets and fresh herbs.
