Two bold new bars have been announced for the Perth CBD and the team that created them says they’re “beyond excited.”
Called Crush and Honey, the two bars hope to bring an entirely new sentiment and style to drinking in the city. They’ll want to be good. The bar and cocktail scene in Perth’s CBD has never been more varied, with scores of top notch bars vying for the customer spend.

The two newbies are the final elements in the build-out of the massive Pirate Life pub brewery venue on Murray Street, which includes TOMA, an expensive, high-end steak restaurant with an American twist and a superb wine list, two private dining rooms, the Pirate Life pub and dining spaces and a just launched new alfresco dining and drinking area on Murray Street.
Bar and restaurant empresario Andy Freeman – who also owns Varnish On King, The Flour Factory, Hadiqa and Caballitos, all in the city – has in his own words, owned “every kind of bar you can imagine … but we’ve never done a rum bar.”
“Honey will be a rum bar with a Caribbean flair. It’s down in the bowels of the building. It’s a bit darker, a bit broodier than bars we’ve done before.”
Honey will have no signage. Customers will have to follow a trail of bees painted on the Pirate Life walls, down some stairs and up a few corridors to find it.
Group chef Charlie Vargas will be cooking fried plantains, jerk chicken and Honey’s signature, empanadas.
“There’ll be no cutlery. It’s food to eat with your hands and enjoy that way,” Freeman said.
Expect drinks like dark and stormy, original daiquiris and “some fresh new inventions.”
Crush Bar is female friendly. “It’s an oasis,” Freeman said. “It’s lighter, brighter and a little bit Miami with high-energy sounds, neon lights and pretty, Instagramable cocktails.”
Crush will serve snacks from the Pirate Life bar menu including mushroom arancini, chicken satay skewers and kingfish sashimi.
Freeman says the roof is made up of 24 glass panels which can be opened to the sky when the weather is good.
Crush and Honey open at 8pm on Thursday September 8.
