Aaron Wood started Wood & Co in his backyard in 2015, where he roasted small batches of beans for his cafe-owning friends around Melbourne. Wood soon ramped it up to a wholesale operation behind Brunswick’s Kines, before setting up his first shopfront on Albert Street in Brunswick in 2019. Today it’s a roastery, wholesaler and an uncomplicated specialty coffee spot for the coffee appreciative and the caffeine inclined.
Wood’s coffee is accessible, creatively packaged and incredibly well roasted. The menu is coffee-centric, with single-origin and blended espresso and filter, as well as cans of cold brew for drink-in or takeaway.
The brand’s much-loved Twin Peaks blend combines Ethiopian and Colombian beans for a toffee-mandarin flavour profile. You’ll also find two other in-house blends, Karma and Sunshine, and single-origin beans rotated in every four to six weeks.
On a little retail shelf, there are bags of Wood & Co’s three stand-in blends (which you can buy a year-long subscription to), along with brewing gear to take home.
The cafe’s fit-out reflects Wood & Co’s no-frills ethos to roasting and serving quality coffee. There’s a handful of seats for dine-in, where you can watch the team roast the beans destined for your cup. The space is open-plan with polished concrete floors and exposed red brick walls, its industrial airiness bringing its coffee roasting operation into full focus.
